A set of six points interpolated by a polynomial of degree 5 (red). While the polynomial always passes through specified points, it undergoes severe fluctuations when coordinate of one of the points in training set is changed.

The same set is also interpolated with a polynomial of degree 3 (blue). In this case it cannot fit to all of the points at once, but it is more resistant to changes. of the training set.
