The entree is, of course, turkey, but done in two ways. The first version is prepared by Chef Stephan Pyles, whose Routh Street Cafe has become one of Dallas' diamond jewels. His treatment of the turkey is traditional, but with the stuffing he picks up the chorizo theme along with a New Mexico specialty, blue cornmeal.

  • You are absolutely correct, but since Chef Stephan Pyles is in Dallas TX,

    which one do you think he is using? It is Mexican chorizo

  • It should be noted that chorizo varies from place to place. A Spanish chorizo is not the same as a Portuguese chorizo is not the same as a Mexican chorizo. Here, it appears that he is using a Mexican chorizo.
