  • I ALSO have fond memories about idli dosa being served in a a small udipi restaurant in a suburb in mumbai in the early 1940 india, and after > 60 years IDLI DOSA HAVE BECOME so familiar to so many people, who love it as much as I or YOU DO. What a miracle of culinary achievement and technology transfer of taste and TSATY-BITES of low calory foods like idli and spicy dosa from the south india, a gift to therest of the world.ENJOY.

  • To ferment the idli batter, keep the batter in a ceramic vessel so it retains the warmth.Warm up the batter by putting in microwave for 30 second intervals for 3 or 4 times.Churn batter inbetween intervals by hand else the hot lumps will be formed.Bring batter to warm temperature not hot.Leave microwave light (light below microwave) on so that microwave chamber is warm all night.Cover batter with glass lid leaving slight opening by placing cover tilted.Leave batter overnight.
