For the sound I was using a laptop with a Presonus FirePod and 8 mics; 2 front of stage, 1 guitar, 1 piano, 1 bass and 3 for drums. I mix and edit sound in Samplitude. For video I've been messing around with different software and have settled on Sony Movie Studio Platinum. Not as many bells and whistles as Vegas Pro, but it does what I need and is reasonably priced. It also handles both HDV and AVCHD formats well (many programs don't).
We had three Sony HD cameras. Two of them were consumer type units (1 on a tripod back in the audience and another closer to the stage and operated by a friend). The third was a much more pro-type Sony unit (which was doing all the zooms, pans, etc.). I feel you can REALLY see a difference in the pro unit (the colors are much deeper) and am thinking about shelling out the extra $5,000 apiece to get two of them.
