take it out at 145* it will be just pink enough -(med/well) perfect everytime i do 18# every xmas - it was good until you took that top cap off the meat - i gotta try that in the grill one day - not winter it would take to long - thats good eating

If you hold the salt up higher then release it from your hands you will get a more even spread of seasoning that you are looking for.

150 -160 degrees? You killed that cow a second time. 120 off the grill and let it set for another 15 to 30 mins covered and it will cook another 10 - 15 degrees.

A 7 rib standing rib roast isn't 28lbs more like 16-20lbs tops

150 degrees is a crime for prime rib. Take it off at 125-130 for medium rare. Otherwise you just burned a good cut of meat.

Nothing better then melt in your mouth cut of meat but raw meat never appeal to me.
