from where you got that the "piano" app uses "8 bit" sounds, it has nothing to do with it.
It sounds like that because instead of using individual wav files for each note like the "pianist" app, "piano" uses an FM synth to come up with notes.
in fact, the "pianist" app wavs could very well be 22khz 8 bit or 4 bit sound files to save up space.
