@Jaeharem i dont use either in mine either. instead of the cheese use left over mashed potatoes or instant potatoes to help it get thick. i put broccoli in mine! :D

I have a question, do you know of a good potato soup that doesn't have bacon or cheese? I haven't really seen any and while I really love potatoes, I also dislike bacon and cheese. Is it possible to substitute in chicken?
