American crosswords have less "unpaired letters" than do the British ones. Basically more letters are "shared" between two or more words, so it's essentially possible to complete an American style crossword by only completing about half the clues.
And there is either clever editing in play here, or he has some kind of superhuman ability with his hands. I'm honestly more inclined to believe the former.

If he is so talented as in "genius" for doing crossword under 5 min. Then he should be as smart as Einstein. But he isnt, if he is like Einstein smart, he would be everywhere across the media.
