This was a good watch and your passion on this is clear to see. I'm not an expert on coffee shops but I think the example of these 2 brands you gave, could be used as an analogy for any 2 businesses in any sector. Eat clearly pay a massive amount of attention to detail on every aspect of their business including the level of service you get and looks like they have managed to roll this out successfully to all their restaurants.
