Theoretically, if you find an animal that was clean and one that was unclean (biblically speaking) you should be able to establish to a creationist's satisfaction that they are different kinds. So if you track the common ancestor of pigs and sheep convincingly, then they will be forced to move to plan B. Deny the evidence. Actually that's plan A for them as well.
Have you seen Dr.Berlinski on whale evolution BTW. A great example of the metre vs mile argument.
