I have to agree with teddytarp regarding the lack of pressure on the tamping. I strong espresso needs to flow slowly in order to extract the the full aromatic flavor, otherwise it's weak and watery. Ashley, you might be losing customers at that coffee shop of yours. Just about everyone I've ever met that loves espresso never returns to a coffee shop if they are serving weak espresso. Although you might not notice the customers that don't return, you aught to...

What they are trying to say, Ashley, is that a light pressure with the tamping results in a very fast flow of water like you're getting and a weak shot. If you apply the recommended 30 lbs of pressure you should get closer to the 22 sec. flow of hot water over the coffee and a proper strength espresso. That and some better camera angles will make you a top notch contributor. I'm going to watch more.
