Finnish Grandma Anna makes Berry Quark for her grandson Jyri.

Ingredients
---------------------------------------

* 250ml Quark

* 250ml whipping cream

* 100g white sugar

* 1tsp vanilla sugar (or some drops of vanilla)

* 250g strawberries, raspberries, lingonberrys or / and blueberries

  • I wish MY family still knew Finnish! The only things we have left are our name, and a recipe called Finnis pulla (sp.?). Grandmas... they're the greatest! I had 18 WONDERFUL years with one of my Great-Grandma's, I just wish I had more.

  • quark is a middle european style of cottage cheese, has less water content and higher fatty content.... if you can't find quark for your recipe, you can buy some cottage cheese, and further reduce the water content by (1) placing a muslin cloth over your collander, and pour your cottage cheese over that... and let it filter the water out in the fridge overnight....
