Harvest Moon Winery: By steaming, we kill bad microbs, swell the empty, kindled wood and do it with our harsh chemicals nor do we need to use lots of precious h2o.

New oak barrels impart store bought flavors... That is, anyone can go to a cooper and buy oak barrels that, when filled with wine, will impart aromas and flavors from that cooper's cheat sheets.. It sounds more like "color by numbers" than actual winemaking, but I know some winemaker's covet their barrels and think they're the greatest thing since, well you know.

  • I have the exact same steamer. How long do you steam your barrels? I tried 4 min steam, followed by hot water rinse, then allowed to drip drain. I re-steamed any barrels that still smelled "off". Even after the second steaming a bunch of nasty wine came out! Do you steam until no residue comes out of the barrel?
