Yes, you can.
In fact, this was my setup (until I switched to iPhone):
on Nokia E72/E52
-- Polar WearLink with BlueTooth
-- Jabra BT3030 BlueTooth HeadPhones
-- Nokia LD-4W external BlueTooth GPS Receiver
All working seamlessly.

On google Android it does work together with a Bluetooth stereo headset (tested with Run.GPS Trainer UV app on Motorola Milestone and G1). But it may depend on the actual hardware you're using.

@nedo1992 Nice question. Have to test this. I put Bluetooth Nokia BH-200 on start playing music via that. Started Sportstraker. As it connecting to Wearlink music kinda skip some times. After that Music is continue fine and i have a pulse. Answer is: It works together.
