What I don't understand is why can't they have ppm ranges? Let the consumer decide how much or how little they consume. Some people have an allergy, others have an intolerance. Let it be quoted in the nutritional table along with Energy, Carbohydrates, Protein etc.

I couldn't agree more. I believe the reason for the 20ppm is to allow more businesses to participate in this incredibly fast growing niche market. In my opinion, 1ppm is 1 too many for a celiac person. If someone is just gluten intolerant or just choosing gluten free as a lifestyle choice, then they may be able to eat 19.99ppm just fine. Folks need to realize that just because you don't feel bad does NOT mean your intestine isn't being damaged.

@GFBeerisNear and it's not just the intestine, either. The brain, skin, bones and other body tissues can easily be affected, even with small amounts of gluten. Thanks for dropping by.
