I noticed one rider wasn't holding the clutch while sitting there idling.. and then just took off like a scooter would. Do all dirtbikes run like that or does he have a special clutch?

Assuming you're talking about the special test starts between 1:00 and 2:20. If you told me which rider exactly I'd be able to check/confirm. As far as I can see they are all holding and using the clutch, you might not be able to see it clearly because of the barkbusters/handguards or because they're using the clutch quickly using only their index finger. The vast majority of full size dirt bikes run a clutch and don't run like a scooter at all! unless they have an aftermarket/rekluse clutch.
