Bamboos do drop leaves. The leaf size varies greatly by species - some have tiny, thin leaves that are absorbed into the lawn when they dry out. If you are concerned with leaf litter, but still want to grow bamboo, try to use a variety with small leaves.

There are more than 1500 different species of bamboo in the world - generally, these are divided into clumpers and runners. The running bamboo varieties can be invasive and should usually be installed in landscapes with rhizome barriers. Clumping bamboos are non-invasive. They grow in a symetrically round clump form that can become 1' - 10' in diameter, depending on the species. Most ornamental clumping bamboos mature with a 4'-5' diameter footprint. No containment barrier is required.

bamboo will eventually spread out beyond where you wanted it, including your neighbor's yard. I would go with anything besides bamboo...try the Nelly R. Stevens Holly (ilex x 'Nelly R. Stevens'). It gets tall (20'), but doesn't spread far (6-10'), it's evergreen as well.

I'm thinking of planting bamboo around the perimeter of my backyard, but I don't want to pepper my neighbors with leaves. Do these plants drop many leaves?
