Any pine will do in a pinch. I usually make tea out of pine needles but the vinegar sounds like a great idea.

I haven't come across any white pine trees around here but there seems to be plenty of Scots pine trees (from which I make a tea with from time to time). Could I use Scots pine in place of white pine to make vinegar? :-)

Interesting, but a visual of the jar stuffed with pine needles would be very helpful. Almost can't hear what you're saying, as well.

Ahoy, Susan and Maties of '09, Feb. 17th, I am trying to qualify for American Food STamps,, but have to get in line for the phone interview, ergo, I am supplimenting my diet w/ wild dandelions, young thistles, and curly dock, which can be preserved in vinegar and salt in a glass jar w/ a glass top. Susun says to use pasturized apple cider vinegar, why not use raw? All I have is Braggs.
I am unable to gather fresh white pine needles so am I able to make white pine vinegar using dried white pine needles?

@TheCerberusbindweed - fresh always best. You should have some kind of pine in your area, so even if not white pine, you can use others for vinegars.
