I'm pretty sure I read on Dom's site that stainless steel is ok. Copper and aluminum are kefir killers. xx

You have a good point. I'm not sure how true this is since I haven't had the kefir Die and seems to be producing just fine. I'm sure there is validity to it and that it can happen but I've had great luck so far and have been doing it awhile. I know Dominick the main Kefir guy will say that about metal but sometimes uses it as well. For me, the jury is still out on this one for me.

I guess you better can place the waterkefir in a light place in the sun during the process and not in a dark cupboard....

They have a slightly different make- up of active cultures but yes they have great benefits for you.

Double no my friend. Metal is bad for water kefir grains as well. Also, the chlorine in your tap water is essentially slaughtering the probiotics.

I noticed you used a metal strainer. Is that okay to use with water kefir grains? Will that affect them?
Also I've just used tap water in my water kefir- is that okay?

Ooooh.. good catch.. TY.. my mind just filled w/ how horrible white sugar is ( granted its the grains 'eating' it :).. You are correct... they might not appreciate Stevia in their diet :) "Sugar in the Raw" Turbinado sugar seems to work best for me.. I keep the kefir on the grains for 24 hours.. then take it off and apply flavoring / stevia after for another 24.. keeping the grains as "Virgin" as i can..

bacteria can't grow on stevia along, there has to be some sugar to feed the kefir bacteria.
Could you substitute honey for the sugar? This recipe looks great, I would try a lime, and make a sprizter!

I tend to not use honey since its antibacterial... it could kill some of the bacteria in the water kefir. A lime instead of a lemon could be an interesting twist :-)
