  • Yep, gotta take the membrane off the bone side (a paper towel helps a LOT when doing that) AND rub the bone side too. No point in saucing up an impenetrable rubber sheet of a membrane that won't allow the flavor into the meat. (I did that my first time smoking ribs and I'll never make that mistake again) They look good though!

  • 1/2 smoked not fully smoked. 1/4 of the time was in oven and other 1/4 time was on gas grill. You didn't fully smoke them. But I bet they were really good though. Good job on them.
