"We met up with wedding planner Tara Faye and wedding cake specialist Rosanna Mulligan in search of how to achieve the perfect wedding cake.

"A lot of the time you tend to see 10, 8, 9 tiers of wedding cakes. If you look at Jordan's cake when she married Peter Andre - it was 6ft tall. I think it had to balance off her dress," says Tara. Don't get a cake that you have to reach up on your tippy toe to cut into is Tara's advice.

We can see how this could be a cake disaster alright. One provider of wedding cakes to the stars is Rosanna Mulligan in Cakes and Co, on Newtownpark Avenue in Blackrock. She tells us that the most popular filling is the chocolate biscuit. That's calorie counting out the window for the special day then!

Cakes and Co. is run by Rosanna, who got serious about their cake-decorating hobby in 1993 and decided to follow her business dream.
The cakes themselves are baked to order at a local bakery with Irish ingredients and the equipment and sugar paste icing purchased from Irish companies. Once delivered, the design process begins with the team meeting together to discuss ideas and then try them out. Frequently, it can take upwards on five to seven days to complete one cake.
