I was finding it more difficult to prepare one meal for myself and my family that would fall in the Stage 3 post-op diet and also be something that my family would enjoy. I thought about my favorite Chinese soup - Wor Wonton an decided to give it a try. This was my first attempt at making this soup. I enjoyed the broth and veggies and my family entire the entire dish.

Here's is the recipe.
For the Wontons you will need the following;
- 1 lb ground chicken (you can use ground pork, chopped shrimp or any combination you'd like)
- 1 beaten egg
- 1/4 cup finely chopped onion (I like using a cheese grater to make sure it's fine)
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tsp ground ginger or you can use fresh ginger finely chopped
- 1 tsp chili paste (optional for a little spice)
- 1 package of Wonton wrappers

Mix everything together, fill your wonton wrappers with 1 tsp of filling and seal edges with water. Boil on high for 4 minute, simmer for 3 minute, remove from heat to cool. Cover to avoid drying out.

Soup
- 4 cups of chicken broth
- 4 cups of beef broth (you can use all chicken or even veggie broth if you'd like, it's your choice)
- 4 cups of bok choy coarsely chopped
- I cup of shredded carrots
- 1 bunch of green onions (about 6-7) reserve some of the tops for garnish
- 1 carton of sliced mushrooms
- 1 small can of drained water chestnuts
- 1 small can of drained bamboo shoots
- 1 lb thinly sliced BBQ Chinese Pork (or you can use chicken breast thinly sliced)
- 20 to 30 medium shrimp, peeled and deveined

Bring your broth to a boil, add your veggies cook for about 4 minutes, add meat continue cooking for 3-4 minutes. Check to see if you need any added salt or pepper. Place 3-4 wontons in a bowl, add your soup, garnish with green onions, serve while nice and hot.

Enjoy!

  • I usually don't like wonton soup, but I have to give it to you, yours looks delicious. I will have to try it. How was the flavor?

  • The flavor was really good. I enjoyed the veggies and the wontons were good too. I used the beef broth to make the flavor more intense. Add things that you enjoy and give it a try :)
