Rendang Beef (Serves 6)

Ingredients:-
1Kg of braising beef diced
2 tbsp of sunflower oil
2 cinnamon sticks
12 cloves
2 bay leaves
600ml of coconut milk

Paste:-
6 Shallots peeled and chopped into quarters
2 Lemon grass stalks roughly chopped
6 Garlic cloves peeled
Ginger root (2 inch piece) peeled and chopped
1 tsp of ground ginger
1tsp of ground cumin
1 tsp of black pepper
1tbsp of ground coriander
2 tbsp of water

Method:-
Make the paste by adding all the past ingredients to a blender and blending until fine paste
Heat the sunflower oil in a pan or wok
Add the cinnamon sticks and cloves and fry for 1 min
Add the coconut milk and paste and fry for about 2 mins
Add the coconut milk and stir in thoroughly
Bring to a simmer and simmer for 2 ½ hours stirring occasionally.

Serve with rice

  • For example we have to cook onion first instead of lemongrass because the onion have to cook longer than lemongrass... other tips... the coconut milk should be last to cook because the taste of coconut milk will gone if cook too long... there are many tips in asean food... thats why the taste of our receipe different than others... ^^Y

  • @mycomplid Ah ha! thanks for the tips. We do love rendang beef and eat it at our local restaurant quite often. The one we cooked was very nice but the restaurants version was much nicer. I will definitely use your tips as you are from Malaysian and you will know much more about this than me. So will let you know how it turns out. Many thanks for your help and tips. Scot and Carola

  • may i know its your rendang have same taste with original rendang... actually you have to cook the ingredient step by step... not mix them all n blend it to make paste... because some ingredient cant absorb very well to meat... they have to cook very well so the aroma of spice can out... our malaysian people didnt want the instant paste from market because the taste is not quite good... try to remake... i bet the taste is better... have a good try ^^Y
