主料 / 蹄膀 1個、梅乾菜 1包、蔥 4支、薑 1塊
調味料 / 醬油 1杯、紹興酒 1大匙、冰糖 1大匙、八角 1粒
做法:
1、部分的蔥切成段入水中煮滾,將刮淨雜毛的蹄膀,放入汆燙洗淨,其餘的蔥切成末,備用。
2、油鍋用蔥薑爆香,放入蹄膀,淋上紹興、醬油、放入八角一起煮滾。
3、加水蓋過蹄膀最少1/2,用大火燒開後,轉小火續煮約2小時至肉香軟爛,入糖續滾至收汁。
3、梅乾菜洗淨、切細末,鍋中入油1大匙燒熱後,放入梅乾菜末炒香,打一點水、入醬油、糖各1小匙調味後,即可排入盤中。
4、取出滷好的蹄膀,放在梅乾菜上,灑上一點蔥花即可。

※ 紹興三烏:烏紗帽、烏棚船、梅乾菜
