Just another super time consuming experiment... does rehydrating dry yeast really help? How important is aeration/oxygenation with dry yeast?

  • The control was sample #1 and had 7grams of yeast dry pitched with no oxy. I didn't think of doing a control while I was introducing the video.

  • You could probably oxygenate your wort just by shaking the bejeezus out of it before adding the yeast. I make mead and the shaking method seems to work just fine.

  • There are a lot of factors at work so you might have success 9/10 times with shaking and then hit a brick wall when you try to ferment out a big beer like an IIPA. Oxygen is a lazy man's insurance policy to good yeast health. I never stress about final gravities.

  • Just wondering, why is lag time important to you? It was one of the parameters measured and counted in this experiment, so I'm curious as to what difference that makes for you. Does it affect the overall outcome of the beer, or is it just a time issue? Good job, by the way. Did you drink those?

  • Actually lag time isn't important as long as it's not days. I was using it as an indicator of yeast colony size for the most part. One conclusion is that hydrating dry yeast before pitching equals more viable cells from the start. A faster start shows that.

  • I wonder if you over aerated? It sounds like 1 min of oxygen injection is normal for 5 gal batches... but not .5 gallon batches. Perhaps O2 toxicity is why they lagged?

  • @mgmatiasek What did he say his flow rate was? like .25lpm? That sounds incredibly low. I usually oxygenate at 15lpm for 40 seconds. Fermentation takes off within a few hours.

    2: dry pitch, oxy

    3: wet pitch, oxy

    4: dry pitch, no oxy

    5: wet pitch, no oxy

    (what was the control?)
