Teaching my dog how to gossip and woof

My dog luke, he's 3 y/o, I got him from the Humane society a year ago (we think he's a german shepherd x pitbull mix), he was super skinny, he weighed only 30 lbs, now he is 60 lbs, so you could imagine how skinny he was!!

So I am trying to teach him how to gossip and bark. He's slowly learning how to bark but when he does he kind of runs away. I think his previous owner hit him or something a long those lines...you can kind of see how he ducks away after he barks.
