Woo-hoo. Demyx.
Demyx isn't terribly hard at level 1 as long as you know what you're doing. Before the battle, set Donald and Goofy's AI so that they follow you around and don't attack anyone. You don't want them to screw up your combo and make Demyx counter.
You start the battle by having to kill 50 water clones in 40 seconds. This is the easiest part of the battle. Just use the Wild Dance RC to suck in the clones and kill them. You have to smack them before you can use the RC, though. Once they're dead, you start the combo you need to do a lot in the battle: two regular combo hits followed by a Finishing Leap, then two air combo hits followed by an Aerial Finish. Demyx will not counter if you do this.
Next, Demyx can do a couple different things. He might shoot some water bubbles at you. If he does that, you can Dodge Roll to the side and and Slide Dash/Flash Step into him to do the aforementioned combo. He might also yell "Water!" If he does that, get ready to Quick Run to the side, as a bunch of bubbles will fall on top of you in a second.
He might say "Ain't it a blast?" If he does, walk up to him and mash triangle to activate a reaction command. After it, you can do two air combo hits and two finishers and he still won't counter. Sometimes he'll summon a couple water clones. Wait for him to shoot more bubbles at you, then Dodge Roll to the side, Quick Run towards him and use one of the water clones' RC to smack Demyx. Rarely he'll pull out "C'mon! Keep to the beat!" If he does, you can use Reflect to block it or Aerial Dodge at the last second to jump over him.
In the middle somewhere, he'll probably start another "Dance, water, dance!" session. They made it easier in Final Mix. In the original, you had to defeat 10 water clones in 10 seconds. In Final Mix, you have 15 seconds to finish.
After he's lost enough HP, he'll switch things up and gain some new attacks. First, he can shoot a bunch of water pillars at you. Reflect is your best bet to avoid it, but a carefully timed Dodge Roll LV2 might work. He could also send up a barrier of water pillars. Use Thunder on Demyx to get him out of it and follow up with a regular ground combo or air combo with two finishers.
That's about it for his attacks. Just dodge and attack until he goes down.

I'm doing a Lv.1 run on the American version, and I'm currently stuck on Demyx. I don't have access to the fancy new moves added to Final Mix, but will that Thunder trick still work for me?

@Sephiroth7734 Yeah, the Thunder trick should still work. IIRC, you should have Explosion as well by then, so you can also use that if you wish.
