ナスは切った後水に30分くらい漬けておくと苦味が取れますよ。

パスタを一緒に炒めるときは、絡めやすいように茹で汁を少しだけ一緒に入れるといいですよ
さらに茹でるときに塩を入れておけば、茹で汁を入れても塩気がいい感じに味の濃さを保ってくれます。
