When I lived in Indiana I had a buddy an he and I would split the cost of buying a whole cow. Then I found a place that for $100-125 would slaughter, process and wrap in butcher paper the entire animal. We would split the outcome and both have beef for most of the year. Did this three times after Christmas. Just find a local farmer, show him some hundred dollar bills, and tell him where to drop it off. Make sure to watch the weekly farm report so you know the going rate for wholesale beef.

Love it man. You are right, the price of beef has gone up - and brisket is supposed to be an inexpensive cut. But if Corned Beef is the end product I say it's well worth it!

Nevermind! I listened to the video again and it's exactly what you mentioned. I imagine 1lb of instacure should last me quite a while?

@Dougie085 Yeah. A few years I would imagine, depending on how much stuff you make. Remember, once you get going with curing stuff, there is always Canadian bacon and tasso ham for something easy. If you want to go more advanced there is capicola ham.

@Tankdriver100 We wear a lot of flannel. Its cold here. Even inside. I paid for a substantial portion of my college by cutting down trees and splitting firewood though. So I guess I'm somewhat entitled.
