"Sous vide" means under vacuum in French. This method places meat in a vacuum sealed bag and cook it under precise temperature controlled water. Works well for eggs, as you can control precisely the doneness. Eggs come with their own "bags".

We would start a dozen eggs in the morning during prep and crack them into glasses and shoot them whole throughout the morning. Best breakfast in the planet.
