The reason the holes stay there, is that the cornstarch-water mixture is whats called a Non-Newtonian Liquid. Meaning that at a state of rest, it acts like a liquid, but when outside force is exerted upon it, it acts like a solid. So when in a state of flux (vibration alternates rest and force) it alternates acting like a solid and liquid, therefore, the hole stays, as it would in a solid, since there's not time for it to collapse fully in the liquid stage.
