This dish is traditionally made with whatever you harvest. Key ingredients tomatoes, olive oil, garlic and onions. Spices are salt, pepper and oregano.
Vegetables used here: artichoke, carrots, eggplant, zucchini and potatoes.
You need at least one cup of virgin olive oil, if you use fresh tomatoes, only one cup of water. Cook in medium heat for 2 hours. stir every 30 min.

  • what was the herb you were cutting? also, what was the spice blend you sprinkled over the dish toward the end of the video?

  • @shaunteaches The fresh herbs were Italian parsley and dill. The dry herb was oregano.
