@AsianCookingmadeEasy Thanks for the insite. I have been planning to try water, just have not gotten around to it. Oil does make the meat silky smooth but I don't like to add that much oil to my food.

Does anyone know where I can find a recipe to the General tso sauce that are used in American style chinese restaurants? Any sauce I've found doesn't even come close. The stuff in the jars at the store is absolutely disgusting. I want to know how to make the sauce like they do at any given restaurant. Please help!

How does the taste of velviting in water compare to doing it in oil? I have done it in oil, love how it turns out but I want to avoid the extra calories of frying in low temp oil.

@powerplantop I find that the taste is about the same, but the texture of the meat in the oil is a bit smoother. But I usually do the water simply b/c it's healthier too :)
