nice... but why are you piercing the seared meat with a hook? Why not tongs?

I got two guesses...

1. It was a lot more practical for shooting purposes, I don't wanna know how many bloopers they had where the meat falls off :D

2. The Stake juice that was could sizle more fully in to the blck pan, giveinbg the sautey a great meaty taste to it.
