士林刀是一種刀柄如茄形，刀身如竹葉的(茄柄竹葉刀)， 又稱(八芝蘭刀) (士林古名) ，日治時期才改稱(士林刀) ; 其特色在於可折疊ˋ攜帶方便，手工研磨，觸感 ˋ 銳利度都迥異於一般刀具，可削可刮。士林刀的鼎盛在日治時期臻至高峰，全台供不應求 。郭合記第一代郭合(1849~)，從大陸漳州來台，世居八芝蘭舊街。郭合年輕時，即跟隨廣東匠人(貓牛師)學習打鐵 ，到今天的郭明讓已是第五代傳人。郭明讓從十五歲開始跟隨父親郭文成學習，每日埋首工作室鍛造刀面，歷經三年四個月，終於學成 一肩挑下百年事業的傳承。郭明讓不僅引用進口鋼質打磨刀身，更著重刀面紋路的鍛造，將製刀技術從實用層面提升到精緻藝術。
