Totally unable to find the recipe on the school's site! That site is sooo badly done, I really donno who you guys contracted to make that website... it's just awful when we're searching for something in particular... Why don't you guys just post the recipe here on youtube and/or give a DIRECT LINK to the recipe itself??? I live in Canada and there's not a lot of chances I'd go to the USA to take my pastry chef course... so there's no need to flood us with admission links on your page! >:(((

If you don't have a blowtorch, you can always use a hairdryer.

    THANK YOU!!! :)

Can you please precise what you mean by 2+2+1?

    How many whole eggs?

I've seen this video around new year's eve and you're the first person to actually take the time to bring forth the ingredient list! Thank you so much for that! :)

Learn from home if you can be self taught to become a Chef all you need is concentration of watching and listening and practising skills above all the interest to achieve. There are lots of self taught home Chefs these days due to the expensive Culinary Schools around the world.
