Think of the grid as a cluster/bunch of little tubes all stacked together. The tubes act to channel the light in a much straighter line than if you use no grid at all... The size/shape of the holes/tubing and length all work together to determine the pattern of light you focus on your subject.

The grid I used for the demonstration of the David Hobby "hack" was a David Honl "store bought" grid.

First, no need to apologize.
Second, it (the grid) will focus the light in the direction the flash and grid is pointed and will minimize light from spilling anywhere except where you want it.
