Measuring the daily coffee harvest of Dota Tarrazu coffee beans at the Down to Earth Estate in Costa Rica.

Each picker's harvest is measured daily before we mill it. We use a standarized measurement unit called CAJUELA which is a volume measurement equivalent to about 25 lbs of weight.

We treat the pickers fairly so as you can see the load of coffee cherries is leveled flat. The color of the cherries ranges from Red, which is more traditional, to Yellow, which is a new variety of the Catuai tree. These are perfectly ripe Costa Rican Tarrazu beans and they will dry under the sun for an average of 6 to 7 days until they reach the perfect stage of moisture content, or "punto".
