So the new update to the WWDC build of Snow Leopard implements Exposé's newest form. As well as Dock Exposé.
Another tip. When in Exposé, press Space to switch to full size QuickLook mode. It's useful for figuring out which window is which in the off chance you have two identically named windows that look similar from a distance.
You can also use your scrollwheel's (Or MightyMouse's scroll ball's) up, down, left and right options to select windows too. Then press Enter to switch to it.

Use a program called Secrets or TinkerTool. It might possibly turn off 3D mode on Snow Leopard though just a heads up.

I am not sure if I would want the minimized windows to show up in the dock or not. Sometimes the reason I minimize windows is so that I won't have so many windows coming up in expose.
I heard that you can tab through icons in the dock. Does this replace the command tab feature that comes up in the middle of the screen in other versions of OS X?

No, it's just an accessibility thing. It allows you to use the keyboard to access the Dock and Menu Bar.
Also, Snow Leopard has a feature for minimizing windows into the icon to keep the Dock empty. It's in System Preferences.
