She says she is using a filling here which she made using pepper (most likely it is green chili), onion, tomatoes, black pepper, mint leaves (I think it is dried), salt, dried chili pepper flakes, all are sauteed in little oil. After she stretches the dough on the floor like you see here, she spreads some oil on them and let them sit a while, and then spreads the filling.
