材料 / 蓮藕 300g、蝦仁 300g、南瓜 300g、生菜 半個、香菜 少許、蔥 1支、蕃茄 1個、沙拉醬 1條
調味料 / 胡椒粉 1小匙、鹽 1小匙、糖 1小匙、太白粉 1小匙
做法:
1、蕃茄切片排盤;生菜切絲泡水後,排於盤底;蓮藕切薄片泡水,備用。
2、蔥、芹菜、香菜切末,蝦仁剁成泥後混合,放入塑膠袋中,同時加入糖、鹽、太白粉、胡椒粉攪拌均勻備用。
3、切塊蒸熟的南瓜片取出放涼備用。
4、蓮藕切片瀝乾水分,灑上太白粉,以兩片蓮藕片夾入蝦泥,沾上麵糊,入油鍋炸至金黃,起鍋瀝油,排入盤中,備用。
5、取一塑膠袋,放入南瓜壓成泥,混入沙拉醬,攪拌均勻後,擠在炸好的蓮藕蝦餅上即可。
