Bread pudding is very popular in the British Isles. Add this delicious apple raisin bread pudding dessert to your table this year. Visit www.holidaykitchen.tv for printable recipes and to buy the dvd.

Ingredients
2 tbsp of butter
2 cups of apples, chopped and cored (about 2 medium)
3 cups of day-old bread cubes (about 3 slices)
1/2 cup of raisins
4 eggs
2 cups skim or low-fat milk
1/3 cup firmly-packed brown sugar
3/4 tsp of pumpkin pie spice
Whipped cream, whipped topping or ice cream, optional

Instruction
1. In a small saucepan, heat butter and stir in the chopped apples.
2. Cover and cook over medium heat, stirring occasionally, until slightly soft, about 5-7 minutes.
3. In a shallow 1 1/2-quart casserole, lightly toss together apples with the day old bread and raisins.
4. In a medium bowl, beat together the eggs, milk, brown sugar, and pumpkin pie spice. Mix until the sugar is dissolved.
5. Pour over the apple mixture.
6. Cover and refrigerate several hours or overnight.
7. Bake in a preheated 350 F oven until a knife inserted near the center comes out clean-about 45-55 minutes.
8. For optimal browning, cook with the cover off for the last 15 minutes.

  • We don't regard this as bread pudding in Britain. We call this bread and butter pudding! Real bread pudding is a firm cake like block sold in bakers shops sprinkled with caster sugar when it's cold!

  • Some lady told me that she uses day old donuts as the bread and it comes out delicious! If anyone has used this recipe, tell me how well it is.

  • i've never understood bread pudding...

  • i have tried this with a few variations, dont peel the apples but core and chop them (braeburn work best - type wasnt't mentioned here) and add a whole pint of cider (good quality mind none of this strongbow or ace stuff) and you get a gorgeous flavoursome apple cider bread pudding, oh and dont forget cinnamon - the spice of dessert fiends!
