Very nice. I like to use russet potatoes and waxy potatoes in my potato leek soup. The russets will cook down to a creamy texture while the waxy potatoes will hold their shape and give the soup a bit of texture. Your recipe is a very tasty one that is so good on a winter evening!

I just made this - omg... Why haven't I tried it sooner...? Thanks for the awesome recipe. For me this made about 8 cups, and I used about 4 cups of chicken stock, and about 1 cup of extra water to cover it.... YUM!!!
Going to follow your recipe with the laptop on the kitchen counter. Thanks for this. Adding ham to customize it a little bit :-)

hey, a quick question. i have always thought spring onion would be a good alternative to leek. but they always end up burnt in seconds. so the proper alternative is just the onion, as in the bulb? tq

@ravniac Yes, it would be better to use an onion instead of spring onions for this soup ;)
