Potato and Leek Soup is a delicious soup, perfect for cold winter nights. Potatoes and Leeks are chopped and combined with garlic and butter. Enveloped in liquid stock and lightly seasoned, this soup is then blended to create a rich and smooth meal that everyone will enjoy - Give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

1 Leek (trimmed, washed and chopped)
700g of Potatoes (washed, peeled and chopped)
2 Cloves of Crushed Garlic (about 2 Teaspoons)
1 Litre of Liquid Chicken Stock (or Vegetable if desired)
25g of Butter
Salt and Pepper
Fresh Parsley (to garnish - optional)

Preparation Time: 10 minutes
Cooking Time: About 20 minutes


ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
(Look up Google for a conversion chart if using Imperial)

  • hey, a quick question. i have always thought spring onion would be a good alternative to leek. but they always end up burnt in seconds. so the proper alternative is just the onion, as in the bulb? tq

  • @ravniac Yes, it would be better to use an onion instead of spring onions for this soup ;)

  • Very nice. I like to use russet potatoes and waxy potatoes in my potato leek soup. The russets will cook down to a creamy texture while the waxy potatoes will hold their shape and give the soup a bit of texture. Your recipe is a very tasty one that is so good on a winter evening!

  • I just made this - omg... Why haven't I tried it sooner...? Thanks for the awesome recipe. For me this made about 8 cups, and I used about 4 cups of chicken stock, and about 1 cup of extra water to cover it.... YUM!!!
