Looks like the Calgary school for Wing Chun Kung Fu under Sifu Brian Lewadney (sp) This looks like he is testing for his level 6 or 7, which is why everyone is sitting down, and he is pausing occasionally in the form - because he wants to get it right for his test.
But then again, google my username if you want to know how I would know this...
(Oh, and FYI, Bruce Lee certanly did use a wooden dummy, he obtained level 6 in Wing Chun under Yip Man.)
you're a dumbass and a tool, Bruce Lee used wooden dummies all the time, and it's an important part of the early stages of training (Especially wing chun). Bruce himself even said that he and his students sometimes use substitutes for training partners.
Following your logic, there is also no point in practicing punches or kicks in air or a bag because nothing is going to hit you back.
The point of a wooden dummy (if I've understood even parts of it correctly) is not to beat the living shit out of it, but learn how to move around your opponents arms and to be able to use proper amount of force to your target. Someone who knows more about Wing Chun can probably explain the thing better.

Too stiff and not flowing enough. Wooden dummy training should be more relaxed and flowing.
