Celery is one powerful food. In this video I have included not only the properties of celery but its benefits and cautions. Below is a Recipe that is cooked but not fully cooked to the hilt. And being that celery doesn't loose most of it's good properties cooked, I thought it would be a great recipe for anyone that is trying to be healthy that even non veggie people tend to like.

Braised celery and broccoli (calabrese) recipe (for four)

This could be the answer to encouraging non veggie lover because this combination has always been eaten

big time with asks of seconds from people that want to have nothing to do with vegetables

Ingredients: * 10-11oz(300g) of celery. Washed and chopped diagonally (if you have a lot of skeptics around,

destring it but keep in mind nutrition deteriorates doing that) * 5oz(150g) of broccoli cut into florets with all stems a similar thickness (1cm) so they cook at

the same rate (calabrese, not the purple or white sprouting sort) * 1oz(30g) of butter (not margarine, that stuff is poison, worse than the detriments of butter) * Half a pint of vegetable stock. (This can be made with 1 tsp of vegetable stock powder, or warm

water and veggie pulp for a quick stock). You need to cover the celery chunks so top up if necessary. * If you have celery leaves, chop them very fine for a garnish. Otherwise use some chopped parsley.

Method: 1. Wash the celery well. (De-string if you are going to do that...I don't personally), and cut

diagonally in 3/4in(approx. 2cm) slices.
2. Over a low heat melt the butter and add the celery chunks. Let the butter and celery infuse for

about 8 minutes. Meanwhile wash and prepare your broccoli. All the stalks need to be approximately the

same thickness 3/8in(1cm) for each stalk.
3. Add the boiling stock to the celery, bring to simmering point and simmer gently for 10 minutes.

Add the broccoli pressing the stalks down into the stock. Cover the saucepan so that the heads can steam

as the stalks soften. Leave to simmer for 5 minutes.
4. Test the broccoli stalks for softness and if cooked remove the celery and broccoli with a slotted

spoon and garnish with chopped celery leaves or parsley.

  • @athomas1124 it is very interesting isn't it. I know it has been a while but I totally lost my login information and finally went back to an archive on my old computer and found it.! Embarrassing but oh well.. it's the truth!
