Wassail is derived from two Saxon words which mean "good health". Now days you would say, "to your health," as a toast before you all take a drink. Look it up on Wikipedia if you really want to know what it means. It does go back to a pagan Anglo-Saxon ritural that was done the night before the new year. It was the thing they did before there was a Christmas. It evolved when they became christians. It evolved again to be just a druken street party where everyone sang door to door.
