Strawberry Shortcake Quick and Easy Recipe:
* 1 box of Duncan Hines moist cake mix (yellow or white) or Buy a pre-made Pound Cake
* Cool Whip or Whip Cream (we used Cool Whip)
* 2 pints of fresh strawberries
* 1/2 cup of sugar

A shortcake suitable for diabetics.

Ingredients:
1 sugar-free Angel Food cake
1 large package sugar-free Strawberry Jello
24 oz strawberries, sliced (1 quart)
Splenda to replace the sugar
Directions:
Take cake and pinch in small pieces and put in long dish. Fix Jello as you would any other Jello. Pour over crumbled cake. Refrigerate to set. Slice the strawberries and sweeten with Splenda after the cake has gelled, Arrange strawberries on top of the cake and enjoy. Now you have a Strawberry Jello/shortcake

  • I like to make a layered shortcake. I also leave the tops on the top, so that the green brings out the color, and maybe add a mint leaf. It makes it that much more presentable.
