it seems that the one in control of yoshimitsu is either nervous or is way too much thinking of his next moves. that's why we can regularly see pauses in his character

Very true, but i think that why people like the game, i mean those moves yoshi was pulling off at the end were beautiful.
I've learnt these days you either love tekken or hate it.
