Zucchini Thogayal
A healthy way of using zucchini peel instead of just throwing it away.
Add coriander and curry leaves according to taste. The thogayal can also be prepared without urad dhal.

The peel of one zucchini
Few pieces of zucchini
Fresh coriander - a small bunch
Curry leaves
Ginger - 6 to 8 chopped pieces
Urad dhal - 1 dL
Coconut - 1 dL
Coriander seeds - 2 tbs
Sesame seeds - 1 tbs
Black pepper - 1 tsp
Dried red chillies - 6
Seasoning:
Mustard - 1 tsp
Cumin - 1 tsp
Asafoetida - 1 pinch
