  • Your plants are wonderful...well done. It is always a pleasure. How long did it take for the eggplants to grow? What do you do with the soil/earth packs when the plants are finished? We are just coming to Spring here in Australia...I sure do hope I have some of your success. Sure you can use the coriander seeds I do all the time.

  • Ahhh Spring, Wish I could say that it was spring here. The eggplants start producing after about a month. When the season is over I can plant cool weather crops, or I can just cover the box with a plastic cover and wait until next season. It does not freeze where I live. Or just barely so it's not a real problem. Im sure you will have a great season!

  • Yes to all! I am beggining to have some trouble keeping up with all of it. I just ordered one of those foodsavers. I made strawberry, and blueberry preserves just to get a feel for canning.

    My recipes evolve around whats ready and I love to mix the veggies up, so whatevers ready plus onion and garlic salt and pepper, add Italian or greek spices, or whatever you have! Sautee in a pan with Olive oil. It will be great, so no worries, just experiment and have fun, you'll find your own favs!

  • Are you canning, dehydrating and freezing your harvest? Your garden is so inspirational. I would love to have such a grand garden next year. But I don't know what I would do with it all. Could you please share some recipes that you make with the zucchini, squash and eggplant. Thanks for sharing!
